Culinary staff at this New England resort recently reached out to a New Hampshire trout farm to continue attempts at localizing their purchasing processes.
Marc Moran over at Hopewell Farms in Newbury says his business was proud to make its first delivery of live trout to the resort on June 1.
The Balsams staff used the opportunity to train culinary apprentices on the handling and processing of live fish.

The Balsams’ former Executive Pastry Chef will reunite with old friends at this New Hampshire vacation spot on Valentine’s weekend, and guests can be part of the fun. Although the guests are gone, all is not quiet at The Balsams. While this New Hampshire hotel is closed for nearly two months, the staff is busy sprucing up and preparing for the coming winter season.
Outside, the maintenance crew is shuttering the warm-weather amenities, such as the pool, golf course, and clubhouse, in order to keep them in top condition for next year. If you’re planning a visit to northern New Hampshire, I must warn you to stay away from these NH attractions if fun is not on the itinerary. For those of you who do happen to spend the day partaking in any of these outdoor activities, working up an appetite, The Balsams is the ideal NH resort for gourmet dining.
